Tonight I made a very tasty taco soup!

I added more veggies, and next time would add even more. I would add a little less cumin next time, and maybe some lime juice.
Below is a picture of a cranberry and white colored bowl with reddish-brown soup with meat, corn, and zucchini visible. The recipe with my suggested additions is below that.
1 Tbsp coconut oil
1 red onion, diced
2 bell peppers, diced
2 lbs ground beef
4 Tbsp chili powder
3 Tbsp cumin (maybe try 2.5 Tbsp?)
2 tsp salt
2 tsp pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cayenne pepper
2 cans diced chilis (4 oz each)– I used hot chilis
1 can diced tomato (would recommend 2)
1 bag frozen corn
2 zucchini, chopped
Assorted other veggies
4 c beef broth
Recommended to try a splash of lime juice
Saute onion and bell peppers in coconut oil for 3-5 minutes until soft
Add ground beef and saute until cooked through.
Drain fat (important, don’t skip this or you will end up with a layer of oil on top of your soup!)
Add spices and stir to combine
Add everything else except lime juice
Simmer 15 min
Remove from heat and add lime juice
Yum. Looks very good.
