Since the paleo cashew bread is a little expensive to make with all the cashews, I’ve been trying out other paleo bread recipes. I found another keeper! This one is made with almond flour. It has a nice crispy crust, a good texture, and tastes good! It doesn’t taste exactly like regular bread, but it is close enough.
I got the recipe from https://paleogrubs.com/crusty-french-bread only I doubled the recipe and made it in a loaf pan. The dough was quite wet, so next time I might try adding a little more almond flour. I also will try to use tapioca starch instead of arrowroot powder next time, since tapioca starch is much cheaper.
Below are three pictures of my loaf of bread, which have a nice dark brown shiny appearance on the outside, and a nice open texture on the inside. Below that I’ll put my doubled recipe.
3 cups almond flour
1.5 cups arrowroot powder
1 Tbsp yeast
1/2 tsp salt
2/3 cups warm water
1 Tbsp honey
4 egg whites, lightly beaten
1 Tbsp olive oil
1 tsp apple cider vinegar
In a large bowl, combine the almond flour, arrowroot flour, yeast, and salt.
Combine water and honey.
Add honey mixture, egg whites, olive oil, and vinegar to the dry ingredients. Mix until a dough forms.
Cover and let rise 30 min.
Put dough into a greased loaf pan and bake at 400 for 30 min.
Let cool in pan 5 min, then cool on a wire rack.
