Zesty salsa


Brad eats a LOT of salsa! He has beans and salsa almost every day. So the batch of salsa I made last time is all gone already!

I decided to try a new salsa recipe this time. It is slightly different from Brad’s mom’s salsa recipe, but not too different. Mostly it has garlic and cilantro in it, and uses cider vinegar and lime juice instead of vinegar.

We like it! I especially like the cilantro in it. I think in the future I’ll make salsa that’s halfway between these two recipes. I will add more tomatoes next time to make it more like Brad’s mom’s recipe for sure. Though I do have a couple of other salsa recipes I found that Brad wants me to try to make! So I might make other salsa recipes to try in the future.

But this one so far is my favorite.

Below is a picture of a quart sized jar of red salsa with green peppers visible in it. You can see in the background of the picture some pears, onions, and my teal KitchenAid mixer. Below the picture I’ll put what exactly I put in my salsa (it differs slightly from the recipe I was going off of which can be found at https://www.food.com/recipe/zesty-salsa-for-canning-97428 ). All of the diced ingredients I put into my food processor and processed for about 5 bursts to get a small dice size.

14 tomatoes, diced (next time I’d use 16 tomatoes)

4 bell peppers, diced

3 onions, diced (next time I might use 4, I put in less than the recipe called for)

8 jalapeños, seeded and diced (mine were pretty big)

5 habanero peppers, seeded and diced (mine were pretty small)

3/4 c apple cider vinegar

3/4 c lime juice

3 cloves garlic, minced

1 bunch cilantro, chopped

1 Tablespoon salt

1 6 oz can tomato paste

Mix all ingredients except for tomato paste.

Simmer 45 to 90 minutes.

Stir in tomato paste.
